Our Winemaker has selected only the finest parcels of fruit identified from Bimbadgen's Palmers Lane vineyard to craft a premium wine of regional style and intensity of flavour.

This Semillon exhibits a fine mineral bouquet with hints of kaffir lime leaf and fresh grass, and a zesty palate of juicy lime citrus flavours and lemongrass that is fresh and crisp. A wine with fine structure that will reward up to ten years careful cellaring.

  • Grown:
    The fruit was sourced from a Bimbadgen’s Palmers Lane Vineyard.
  • Picked:
    Following a dry December and Januray the vineyard was harvested on the 24th January, 2011.
  • Made:
    The fruit was crushed and pressed immediately into stainless steel tanks and minimally fined. The clear juice was racked and then inoculated with a neutral yeast strain. The yeast carried out fermentation over 3 weeks at cool temperatures to retain all of the fruit characters. Three months on yeast lees to build palate weight before fining, filtration and bottling.

    July 2011.
  • Analysis:
    Alcohol: 10.4% T/A: 7.8 g/L pH: 2.99
  • Appeareance:
    Pale lemon with a youthful lime hue.
  • Aroma:
    Lifted citrus lime and lemon.
  • Palate:
    This is a typical Semillon, lime fruit supported by a definitive lemon acidity. A true expression of vineyard and terroir.
  • Cellaring:
    Tasting this wine now in 2015 would suggest there is potential for further 10 years of bottle age. (If you can wait that long).
  • Food:
    Tuna ceviche.
