The finest Chardonnay grapes were harvested from our McDonalds Road and Palmers Lane vineyards. A delightfully complex and crisp methode traditionelle wine combining a tight, lively structure with upfront flavours of crisp citrus fruit. These fresh flavours are complemented by a creamy palate interlaced with hints of toasty brioche from bottle fermentation and ageing, finishing with a fine bead.

  • Grown:
    The Chardonnay was grown on Bimbadgen’s Hunter Valley vineyards located on MoDonalds Road and Palmers Lane, Pokolbin.
  • Picked:
    29th January 2012.
  • Made:
    Hand harvested in the cool hours of the morning, the fruit was whole bunch pressed into stainless steel tanks. A small portion was gravity fed off to old French Oak for wild, natural fermentation. The remaining juice was fermented slowly at cool temperatures, maintaining its natural fruit integrity. The wine was allowed to rest on yeast lees before being transferred to bottle, where it gained extra yeast autolysis characters.

    Alcohol: 13 %
  • Appearance:
    Pale yellow with a golden green tinge.
  • Aroma:
    Lemon, interlaced with hints of toast and citrus.
  • Palate:
    A lively structured palate exhibiting clean, crisp, upfront zesty lemon flavours, rounded off by a creamy palate and a fine bead.
  • Cellaring:
    2 years.

    A wine for celebrating, drink on its own with a loved one or friends. Oysters or Froie Gras.
